Chicken & Apple stuffed Squash











Ingredients:

1 lb ground Chicken                                  2 Acorn squash, halved.  (Serves 4)

2 medium Apples, diced                           1 medium Onion diced

1 TBS sage                                               1 tsp garlic

1-2 tsp white vinegar                                2 TBS olive oil

1 cup low fat shredded cheddar (or cheese of choice)

 

Instructions:

1.  Cut squash in half, remove and discard the seeds and place cut side down on a baking sheet. 

2.  Bake at 400° for 45 minutes. 

3.  While squash is cooking, brown ground chicken and sauté onion in olive oil over medium heat. 

4.  Once cooked through, add sage, garlic, diced apples and vinegar.  Cook for 1-2 minutes. 

5.  Turn over the squash and stuff it with chicken and apple mixture. 

6.  Top with shredded cheese. 

7.  Bake for 3-5 minutes until cheese is melted or golden brown if desired.

 

*Dried cranberries go very well in this recipe!
