The Best Rice Salad

Wild Rice Salad

Ingredients:

1 box Wild Rice (comes in a tiny box,  “Minnesota grown”)

8 oz smoked gouda, cubed or diced

3 cups red grapes, sliced in half

1 sweet onion, chopped or diced

1 red bell pepper, chopped

1 to 2 cups Ranch dressing

 

Instructions:

1. Cook wild rice according to package (~45 mins).

2.  While rice is cooking, cut up gouda, grapes, onions and pepper.

3. When rice is done, drain and add to large bowl.  Add all other ingredients and combine while rice is hot.

(*If you do not like raw onion or pepper, you can add this to the rice for the final 1-2 minutes of cooking to reduce spice and soften.)

4. Add 1 cup of Ranch and wait.  May needs to add more until desired creaminess.

5. Refrigerate for 2-3 hours before serving.

This makes quite a bit and can serve up to 10 people.
