Sweet Potato Crab Cakes with a Garlic Parsley Mayo

1 can (16 oz) Lump or Special Crab Meat            1 Sweet Potato, chopped

1 medium onion                                                    1 egg

1 TBS Olive Oil                                                      ½ cup Oats                          

1 TBS Lemon Juice                                               

½ tsp Powdered Garlic½ tsp Black Pepper

 

Mayo:

½ c Mayo                                                   1 tsp Lemon Juice

¼ tsp Powdered Garlic                              1 tsp Parsley (fresh or dried)     

Instructions:                                                          

1.  Boil or steam sweet potato until soft.  Puree or mash and add to mixing bowl.

2.  Mix in egg, oats, lemon juice, and spices

3.  Sauté onion in olive oil over medium heat until translucent. Add to bowl.

3.  Mix thoroughly.  Form 3-4 oz patties and place on baking sheet.

5.  Bake at 350 for 20 minutes.  (These can be pan-fried if you prefer)

6. Stir mayo, lemon juice, garlic and parsley until combined.
