Peanut Noodles

2 cups Thin sliced veggies, *I use carrots, onion and broccoli stalks)

3-4 TBS Olive oil

1/2 cup Sugar

1 teaspoon Chili Paste

2 tablespoon Rice Vinegar

1 tsp Garlic

1/2 teaspoon Ground Ginger

½ cup Salt free Broth

2 TBS chopped Cilantro

12 ounces rice Noodles

1 tsp Coconut Aminos (or Low Sodium Soy Sauce)

*Add a protein if you want

1. Cook noodles according to instructions on the package. Drain and keep warm.

2. Heat oil over medium heat in a large pan, sauté veggies until al dente.

3. In a bowl, whisk PB, broth, sugar, spices, vinegar, chili paste, coconut aminos. Add to the hot pan and stir about 1 – 2 minutes.

4. Reduce heat and taste sauce. Add more chili paste, vinegar, aminos if needed.

5. Toss in noodles to coat.

6. Add cilantro, or green onions, or sesame seeds; Whatever your lil’ heart desires!
